Sup Ayam Kampung Mamak Ingredients:

  • 2 pounds of chicken thighs or breasts, boneless and skinless
  • 3 cups of water
  • 1 onion, chopped
  • 1 tablespoon of ginger, minced
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of vegetable oil
  • 1 cup of coconut milk
  • 1 stalk of lemongrass, bruised
  • 3-4 sprigs of coriander leaves, chopped
  • 1-2 red chillies, sliced (optional for spice lovers)

Sup Ayam Kampung Mamak Instructions:

To start, heat the vegetable oil in a pot over medium-high heat. Add the onions, ginger, and garlic and cook until the onions become translucent. Add in the chicken and cook until it is no longer pink.

Next, add the water, salt, black pepper, and lemongrass into the pot. Bring everything to a boil, then lower the heat and let it simmer for around 10-15 minutes or until the chicken is fully cooked and tender.

After the chicken is cooked, remove it from the pot and shred the meat into small pieces. Set aside.

Pour the coconut milk into the pot and let it simmer over low heat for approximately 10 minutes, stirring occasionally.

Once the soup has thickened a bit and is flavorful, add the shredded chicken back into the pot. Stir to combine, then let it simmer for another 5 minutes. Add chopped coriander leaves and sliced red chillies if you choose.
