- 600g beef, cut into small cubes
- 4 cups thick/coconut milk
- 4 kaffir lime leaves
- 2 stalks lemongrass, bruised
- 3 turmeric leaves, finely sliced
- 3 Tbsp. kerisik (toasted grated coconut)
- 3 Tbsp. tamarind juice
- 1 Tbsp. salt
- 3 Tbsp. sugar
- Oil for cooking
Instructions:
- In a large pan, heat up some oil and add the beef. Cook the beef until it is browned on all sides. Remove the beef from the pan and set it aside.
- In the same pan, add some more oil and fry the spice paste ingredients until nicely browned.
- Add the kaffir lime leaves, lemongrass, and turmeric leaves to the pan and continue cooking until they become fragrant.
- Add the beef back into the pan and mix well with the spice paste.
- Pour the thick/coconut milk into the pan and bring to a boil. Reduce the heat and let it simmer uncovered until the liquid turns thicker and oil starts to form on the surface.
- Add the kerisik, tamarind juice, salt, and sugar. Stir well and continue cooking until the beef becomes tender and the curry sauce becomes thick and creamy.
- Once the beef is tender and the curry sauce is thick and creamy, serve the Rendang Tok hot with some steamed rice.
