Ingredients:

2 large ikan kembung
10 fresh kaffir lime leaves
3 stalks lemongrass, bruised
2 turmeric leaves
2 pandan leaves
2 cloves garlic, chopped
1 thumb-sized ginger, sliced
1 thumb-sized galangal, sliced
2 red chilies, sliced
2 green chilies, sliced
2 tomatoes, sliced
1 tablespoon tamarind paste
4 tablespoons fish sauce
1 tablespoon sugar
1 tablespoon salt
Banana leaves, cut into squares

Instructions:

Clean and prepare the ikan kembung. Slice the fish into pieces, and set aside.
In a large mixing bowl, combine the kaffir lime leaves, lemongrass, turmeric leaves, pandan leaves, garlic, ginger, galangal, red chilies, green chilies, and tomatoes. Mix well.
Add the tamarind paste, fish sauce, sugar, and salt. Mix until everything is well combined.
Add the fish to the mixing bowl, and gently toss until the fish is coated in the seasoning mixture.
Prepare the banana leaves by warming them over an open flame or in a pan until they are soft and pliable.
Divide the fish mixture equally among the banana leaf squares, and wrap each square into a sealed packet.
Place the packets onto a steamer, and steam over high heat for about 20-25 minutes.
Once done, remove from the steamer and serve hot, either as is or with rice.
