7. Salt, to taste

The Spice Paste:

1. 10 dried chillies, deseeded and soaked in hot water
2. 5 fresh red chillies
3. 10 shallots
4. 5 cloves of garlic
5. 3 cm of ginger
6. 3 cm of galangal
7. 2 tsp of coriander powder
8. 1 tsp of cumin powder
9. 1 tsp of fennel powder
10. 1 tsp of turmeric powder

The Instructions:

1. In a blender, blend all the spice paste ingredients until it forms a smooth paste.
2. Heat the cooking oil in a wok or a large saucepan on medium heat. Fry the spice paste until fragrant, and the oil separates from the paste.
3. Add in the chicken pieces and stir until the chicken is coated evenly with the spice paste.
4. Pour in the coconut milk and add in the lemongrass, kaffir lime leaves, and turmeric leaves. Stir well.
5. Add salt to taste, and bring the mixture to a boil.
6. Once it starts boiling, lower the heat and let it simmer for 2 to 3 hours until the chicken is tender and the gravy has thickened.
7. Stir occasionally to prevent the chicken and the gravy from sticking to the bottom of the pot.
8. Once the chicken is cooked and the gravy has thickened, turn off the heat.
