Ingredients
For the Noodles:
- 300g of fresh egg noodles
- 1 tablespoon of sesame oil
- 1 teaspoon of light soy sauce
- 1 teaspoon of dark soy sauce
- 1 teaspoon of sugar
For the Wan Tan:
- 200g of minced pork
- 1 tablespoon of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of Shaoxing wine
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 30 sheets of wan tan wrappers
For the Char Siew:
- 500g of pork shoulder or belly
- 2 tablespoons of soy sauce
- 2 tablespoons of oyster sauce
- 2 tablespoons of honey
- 1 tablespoon of dark soy sauce
- 1 tablespoon of Shaoxing wine
- 1 teaspoon of five spice powder
For the Sauce:
- 1 teaspoon of sesame oil
- 1 teaspoon of light soy sauce
- 1 teaspoon of dark soy sauce
- 1 tablespoon of oyster sauce
- 1/2 teaspoon of sugar
- 1/2 teaspoon of white pepper powder
- 1/2 cup of chicken stock
Instructions
Preparing the Char Siew:
- Mix all the ingredients for the char siew marinade in a bowl. Marinate the pork for at least 4 hours or overnight in the fridge.
- Preheat your oven to 180°C. Line a baking tray with foil and place the pork on top.
- Bake for 20 minutes, then flip the pork over and bake for another 20 minutes until cooked through and slightly charred.
- Remove from the oven and let it cool down slightly. Slice the char siew thinly and set aside.
Preparing the Wan Tan:
- Mix all the ingredients for the wan tan filling in a bowl. Place a tablespoon of the filling in the center of a wan tan wrapper.
- Wet the edges of the wrapper with water and fold in half, pressing the edges together to seal.
- Bring a pot of water to boil. Add the wan tan and cook until they float to the surface, about 4-5 minutes. Remove from water and set aside.
Preparing the Noodles:
- Boil the egg noodles for about 2-3 minutes, then drain them and rinse under cold water. Drain the water and set aside.
Preparing the Sauce:
- Heat up the sesame oil in a pan. Add the chicken stock and all the other ingredients for the sauce.
- Cook until the sauce has thickened slightly, about 2-3 minutes. Remove from heat and set aside.
Assembling the Wan Tan Mee:
- Place the cooked egg noodles in a bowl. Add the sesame oil, light soy sauce, dark soy sauce, and sugar. Mix well.
- Top the noodles with the cooked wan tan and sliced char siew. Pour the sauce over the noodles.
- Serve hot and enjoy your homemade Wan Tan Mee!
