Ingredients

For the Noodles:

  • 200g of minced pork
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of Shaoxing wine
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 30 sheets of wan tan wrappers

For the Char Siew:

  • 500g of pork shoulder or belly
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 2 tablespoons of honey
  • 1 tablespoon of dark soy sauce
  • 1 tablespoon of Shaoxing wine
  • 1 teaspoon of five spice powder

For the Sauce:

  • 1 teaspoon of sesame oil
  • 1 teaspoon of light soy sauce
  • 1 teaspoon of dark soy sauce
  • 1 tablespoon of oyster sauce
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of white pepper powder
  • 1/2 cup of chicken stock

Instructions

Preparing the Char Siew:

  1. Mix all the ingredients for the char siew marinade in a bowl. Marinate the pork for at least 4 hours or overnight in the fridge.
  2. Preheat your oven to 180°C. Line a baking tray with foil and place the pork on top.
  3. Bake for 20 minutes, then flip the pork over and bake for another 20 minutes until cooked through and slightly charred.
  4. Remove from the oven and let it cool down slightly. Slice the char siew thinly and set aside.

Preparing the Wan Tan:

  1. Mix all the ingredients for the wan tan filling in a bowl. Place a tablespoon of the filling in the center of a wan tan wrapper.
  2. Wet the edges of the wrapper with water and fold in half, pressing the edges together to seal.
  3. Bring a pot of water to boil. Add the wan tan and cook until they float to the surface, about 4-5 minutes. Remove from water and set aside.

Preparing the Noodles:

  1. Boil the egg noodles for about 2-3 minutes, then drain them and rinse under cold water. Drain the water and set aside.

Preparing the Sauce:

  1. Heat up the sesame oil in a pan. Add the chicken stock and all the other ingredients for the sauce.
  2. Cook until the sauce has thickened slightly, about 2-3 minutes. Remove from heat and set aside.

Assembling the Wan Tan Mee:

  1. Place the cooked egg noodles in a bowl. Add the sesame oil, light soy sauce, dark soy sauce, and sugar. Mix well.
  2. Top the noodles with the cooked wan tan and sliced char siew. Pour the sauce over the noodles.
