Hey guys, have you ever heard of Laksa Johor? If not, let me tell you, it's one of the most delicious dishes you'll ever have. And lucky for you, I've got the recipe right here!

Gather These Ingredients:

For the broth:

1/2 cup of dried shrimp
1/4 cup of tamarind paste
1/4 cup of fish sauce
1/4 cup of fresh lime juice
1/4 cup of palm sugar
6 cups of water

For the paste:

10 dried red chillies, deseeded and soaked in hot water
1 large onion, diced
5 cloves of garlic, minced
2 stalks of lemongrass, thinly sliced
1 inch of fresh turmeric root, peeled and minced
1 inch of galangal root, peeled and minced
2 tablespoons of shrimp paste
2 tablespoons of vegetable oil

For the laksa:

1 pound of thick rice noodles
1/2 pound of cooked shrimp
1/2 pound of cooked chicken breast, shredded
1/2 pound of bean sprouts
1/4 cup of chopped scallions
1/4 cup of chopped cilantro

Get Cooking:

1. In a blender or food processor, blend together all the paste ingredients until you get a smooth consistency.

2. In a large pot, bring the water to a boil. Add the dried shrimp and reduce heat to a simmer. Let simmer for 15 minutes.

3. Strain the dried shrimp from the pot and set aside broth.

4. In a separate pot, heat the vegetable oil over medium heat. Add the paste and fry until fragrant, about 5 minutes.

5. Add the broth, tamarind paste, fish sauce, lime juice, and palm sugar to the pot with the paste. Bring to a boil and let simmer for 10 minutes.

6. Assemble your laksa by dividing the rice noodles and broth between bowls, and topping with shrimp, chicken, bean sprouts, scallions, and cilantro.
